Macadamia Banana Nut Muffins

I love banana nut muffins and I love white chocolate macadamia nut cookies so I figured, why not put the two together?! And that’s how I created my Macadamia Banana Nut Muffins.

I started with this banana nut muffin recipe from Happy Pretty Blog and then put my own twist on them.

Macadamia Banana Nut Muffins *base recipe from Happy Pretty Blog*

Ingredients from Happy Pretty Blog recipe:
1 cup white sugar
½ cup vegetable oil
3 large ripe bananas
2 eggs
2 cups flour
½ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
1 cup chopped walnuts (I used chopped macadamia nuts)**I reserved about 1/4 cup to sprinkle on top of muffins**
**Ingredients I added to this recipe:
1/2 cup of white chocolate chips
1/2 cup of sweetened shredded coconut *not traditionally in white chocolate macadamia nut cookies but I had some on hand and love coconut so figured why not throw it in too*
Preheat oven to 350 degrees.
In a mixing bowl or stand mixer, cream sugar and oil together. Then add your bananas and eggs.
Sift all the dry ingredients together in separate bowl and then mix with the wet. Or if you’re like me, just throw those all into the mixer too. It still turns out just the same!
Put in coconut, 3/4 cup of macadamia nuts, and white chocolate chips and mix together gently. Add the vanilla last and make sure to give it a good mix so that the batter is even.
Pour into a greased muffin pan. Sprinkle remaining macadamia nuts on the top.
Bake at 350 degrees for about 30 minutes.
